Eggcellent, highly nutritious breakfast wraps!

Sautéed kale is a popular item in our household. Its a quick and easy way to make a nutritious addition to any meal, and as we all know, the more veggies the better.

In a standard 2,000 calorie diet, just one cup of fresh kale supplies
206% DV of vitamin A, 134% DV of vitamin C, and 684% DV of vitamin K.
ACCORDING TO Kathleen M. Zelman, MPH, RD, LD:
Vitamin A: a fat-soluble vitamin that is important for normal vision, helps prevent macular degeneration, strengthens the immune system, and reproduction. Vitamin A also helps the heart, lungs, kidneys, and other organs work properly.

Vitamin C: is necessary for the growth, development and repair of all body tissues. It's involved in many body functions, including formation of collagen, absorption of iron, the immune system, wound healing, and the maintenance of cartilage, bones, and teeth.

Vitamin K: a group of fat-soluble vitamins that play a role in blood clotting, bone metabolism, and regulating blood calcium levels, and is needed to produce prothrombin, a protein and clotting factor that is important in blood clotting and bone metabolism.

Naturally occurring nutrients are almost always better for the human body than artificially sourced vitamins. Living components found in natural food sources are balanced nutritionally to benefit the body in ways that pills cannot replicate. So be mindful of where you acquire the majority of your nutrition.

INGREDIENTS:
1 Whole Egg and 2 egg whites
1.5 Teaspoon of Extra Virgin Olive Oil
1/4 Cup of 1 Minute Oats
1/2 Cup Chopped Kale (Stems Removed)
2-100% Whole Wheat Tortilla Wraps (6")
1 Teaspoon of Sriracha (or your favorite nondairy dipping sauce)
DIRECTIONS:
1. Bring large saucepan to medium high heat.
2. Pour in olive oil, rotating the pan to allow distribution of the oil.
3. Add kale, distributing evenly over the hot oil, preventing overlapping of the kale leaves.
4. Allow to saute for 2 minutes.
5. In the meantime, break eggs, dropping the actual eggs into a mixing bowl, and discard the egg shells.
6. Add oats and beat the egg/oat mixture until evenly mixed.

7. Pour mixture evenly over the Kale.

8. Allow eggs to heat with the kale for approximately 30 seconds.

9. Try to "flip" the mixture over inside the pan, with a spatula.
10. Allow to heat for another 20 seconds while seasoning with pepper and sea salt.

11. Scramble mixture and add to two 100% whole wheat wraps.

12. Fold like burritos and enjoy while dipping in salsa, pico de gallo, hot sauces, or just enjoy it as is. You can also heat the wrap directly on the pan for 30 seconds on each side, to create a crispier shell.
