Keeping it simple, on-the-go, is the way to go!

Monday morning I have to take three high school students on a college trip. It's a brief 100+ mile drive, but we need to eat sensibly(good fats, phytochemicals, fiber, alkaline, energy carbs)without the sluggish feeling after eating.


This bunch of energy, shown below, is my "go to" when keeping it simple "for beginners".


PB&J's:

100% Whole Wheat bread (4 slices)

Peanut Butter

Chia seeds (2 tablespoons)

Home made raspberry spread (4oz smashed raspberries, tablespoon chia seeds,1/4 cup apple juice reduced in saucepan, and chilled)


2 Honeycrisp apples


Sea salted almonds


Sunflower seeds


Green grapes


Home popped popcorn topped with coconut oil and Himalayan salt


Not shown is the blueberry cinnamon oatmeal and scrambled eggs for breakfast.


Keep it simple!
