For years I always thought of "the green grassy, leafy stuff" on the plate at restaurants were just meant for the appearance of the food, and basically, trash. Now after a whole life of training, fighting, injuries, losses and recoveries, I find out that "the green grassy, leafy stuff" was God's gift to humankind. Parsley, long thought of as merely a garnish has a chlorophyllic content that is high enough to reduce the increase of urinary mutagenicity following the consumption of fried foods! So, in FACT, it is quite possibly the BEST garnish, and post-fried food item of all. Parsley also has a high phytochemical content(flavonoids, phenylpropenes, carotenes) also highly regarded for their anti-cancer properties. Myristicin, limonene, eugenol and alpha-thujene have all shown anticancer effects in humans. Try using in bunches with other fresh vegetables in a romaine lettuce leaf with your favorite dressing or non-dairy sauce after a meal to promote digestion, nutrient absorption, nerve stimulation and reduce cancerous effects of consuming fried foods if consumed afterward.
